Practical education, HEALTHY & SPECIAL savory meals, is held on the 23rd November 2017. in Istrian Educational gastronomic center in Pazin for chefs from Losinj and Istria. It had been organised by AZRRI (Agency for Rural Development of Istria).
During the first part of practical education chefs were educated, through Power Point presentation, about everything they need to know about special food requirements when preparing meals for those with that kind of special need, about food allergy, celiac disease, diabetes, food intolerance... and how to prepare food for those with special food requirements.
Then they were educated how to preserve nutritional treasure while preparing any sort of allergen free meal so that meal would be healthy for everyone and suitable for those with special food requirements or chosen diet (eg. vegan…)
They could also learn about protocol, that must be respected, from purchase of ingredients to presentation of meals on plates, and also how to treat guests with special food requirements and make them feel welcome and safe.
During the second part of practical education following HEALTHY & SPECIAL allergen free meals were prepared:
Red lentil soup
Chickpea and sunflower seed spread aka pate
Savory millet muffins
Millet and courgette spread aka mayonnaise
Red lentil and buckwheat pie
Chickpea burgers
Buckwheat as side dish
Millet as side dish
Chicken breasts in hokkaido pumpkin sauce
