Practical education in preparation of Free Desserts, allergen free desserts, is held in Educational gastronomic center in Pazin for chefs and pastry chefs from different hotels and restaurants from Istria County. It had been organised by AZRRI (Agency for Rural Development of Istria).
This kind of practical education was consisted of two parts:
- education through Power Point presentation about everything chefs and pastry chefs need to know about special food requirements when preparing meals for those with that kind of special need, about food allergy, celiac disease, diabetes, food intolerance... and how to prepare food for those with special food requirements.
Through this education participants could learn about ingredients that can be used when preparing allergen free desserts, about protocol, that must be respected, from purchase of ingredients to presentation of meals on plates, about ingredients that are most often used when preparing healthy and special Free Desserts, allergen free desserts that are functional desserts for everyone. They could also learn how to treat guests with special food requirements and make them feel welcome and safe.
- practical preparation of Free Desserts was consisted of preparation of the following allergen free desserts whose nutritional composition makes them proper sweet meals for everyone:
Free carob muffins carob topping
Free raw cake (avocado and banana)
Free Dessert made of cooked buckwheat, millet and orange sweet potato
Free Dessert made of cooked millet and purple sweet potato
Free cake – buckwheat and tapioca biscuit and millet, orange and purple sweet potato cream
